Ingredients
  

Pasta Skillet
  • 8 oz pasta any short variety
  • 2 tbsp olive oil
  • 3 cups mushrooms sliced
  • 3 cloves garlic minced
  • 2 cups spinach fresh
  • 1 cup broth vegetable or chicken
  • 1 cup milk or half-and-half
  • 1 cup Parmesan cheese freshly grated
  • 1 tbsp butter optional
  • 1 tsp Italian seasoning
  • 0.5 tsp crushed red pepper flakes optional
  • salt and pepper to taste

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Heat olive oil in a skillet and sauté mushrooms until browned.
  2. Add garlic, seasoning, salt, and pepper, cooking until fragrant.
  3. Pour in broth and milk, scraping up browned bits.
  4. Add uncooked pasta and stir to coat.
  5. Cover and simmer 10–12 minutes, stirring occasionally.
  6. Stir in spinach until wilted.
  7. Turn off heat and add Parmesan until smooth.
  8. Serve topped with extra Parmesan and parsley.

Notes

Add more broth if pasta looks dry while cooking.
