Ingredients
  

Taco Filling
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning
  • 0.5 cup salsa
Assembly
  • 6 small tortillas
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet and sauté onion until soft. Add ground beef and cook until browned.
  3. Stir in garlic, taco seasoning, and salsa. Simmer for 2–3 minutes and remove from heat.
  4. Warm tortillas slightly so they are pliable.
  5. Sprinkle cheese on each tortilla, add meat filling, then top with more cheese.
  6. Fold tortillas and place on baking sheet.
  7. Bake for 12–15 minutes until tortillas are crisp and cheese is melted.
  8. Cool slightly before serving with desired toppings.

Notes

For extra crisp tacos, brush tortillas lightly with oil before baking.
