Method
- Heat olive oil in a large pot and sauté the onion for 3–4 minutes.
- Add garlic and cook for 30 seconds.
- Add ground beef or sausage and cook until browned.
- Stir in tomato paste and cook 1 minute.
- Add crushed tomatoes, broth, seasoning, salt, and pepper.
- Bring to a boil and add broken lasagna noodles.
- Simmer 12–15 minutes until noodles are tender.
- Mix ricotta, mozzarella, and Parmesan in a small bowl.
- Serve soup topped with cheese mixture.
Notes
For extra richness, add a splash of cream before serving.
