One Pot Lasagna Soup

A cozy, hearty lasagna-inspired soup made in just one pot with noodles, rich tomato broth, and a creamy ricotta-mozzarella topping.

Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 lb ground beef or Italian sausage
  • 2 tbsp tomato paste
  • 28 oz crushed tomatoes
  • 5 cups broth chicken or vegetable
  • 8 oz lasagna noodles broken into pieces
  • 1 tbsp Italian seasoning
  • salt and pepper to taste
Cheese Topping
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 0.5 cup Parmesan cheese grated

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Heat olive oil in a large pot and sauté the onion for 3–4 minutes.
  2. Add garlic and cook for 30 seconds.
  3. Add ground beef or sausage and cook until browned.
  4. Stir in tomato paste and cook 1 minute.
  5. Add crushed tomatoes, broth, seasoning, salt, and pepper.
  6. Bring to a boil and add broken lasagna noodles.
  7. Simmer 12–15 minutes until noodles are tender.
  8. Mix ricotta, mozzarella, and Parmesan in a small bowl.
  9. Serve soup topped with cheese mixture.

Notes

For extra richness, add a splash of cream before serving.
