Pasta
  • 12 oz pasta fettuccine or penne
  • 2 tbsp olive oil or butter
  • 4 cloves garlic minced
  • 8 oz mushrooms sliced
  • 3 cups vegetable broth
  • 1 cup milk
  • 3 cups fresh spinach
  • 1 cup parmesan cheese grated

Method
 

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Add mushrooms and cook until softened.
  4. Stir in pasta, vegetable broth, and milk.
  5. Simmer until pasta is tender and sauce thickens.
  6. Stir in spinach and parmesan until creamy.
