  • 12 oz dry pasta spaghetti or linguine
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 6 cloves garlic minced
  • 2.5 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 0.75 cup Parmesan cheese freshly grated
  • 0.5 tsp salt adjust to taste
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add minced garlic and cook until fragrant, about 30–60 seconds.
  3. Pour in broth and heavy cream, stirring to combine.
  4. Add dry pasta and gently submerge it in the liquid.
  5. Simmer, stirring frequently, until pasta is al dente and sauce thickens.
  6. Lower heat and stir in Parmesan cheese until smooth.
  7. Season with salt, pepper, and red pepper flakes.
  8. Rest briefly before serving and garnish as desired.

Notes

Use freshly grated cheese for best texture and flavor.
