Ingredients
  

Main
  • 1.5 lbs chicken breast sliced
  • 3 bell peppers sliced
  • 1 onion sliced
  • 3 cloves garlic minced
  • 12 oz pasta penne or rotini
  • 3.5 cups chicken broth
  • 0.75 cup heavy cream
  • 1 cup cheddar cheese shredded
Spices
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • salt & pepper to taste

Equipment

  • Mixing bowls

Method
 

  1. Heat oil and cook chicken with spices until golden; remove and set aside.
  2. Add sliced peppers and onions to the pot; cook until softened.
  3. Add minced garlic and cook for 30 seconds.
  4. Pour in chicken broth and pasta; simmer until pasta is tender.
  5. Stir in cream, cheese, and cooked chicken.
  6. Add lime juice, adjust seasonings, and serve with cilantro.

Notes

For extra spice, add jalapeƱos or chipotle peppers.
