Ingredients
  

Chicken & Rice
  • 4 boneless skinless chicken thighs
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter divided
  • 5 cloves garlic minced
  • 0.25 cup honey
  • 1 tbsp soy sauce
  • 1.5 cups long-grain white rice uncooked
  • 2.5 cups chicken broth
  • 1 tbsp lemon juice optional
  • fresh parsley for garnish

Method
 

  1. Season chicken with salt, pepper, and smoked paprika.
  2. Heat olive oil and 1 tbsp butter in a skillet; sear chicken until golden, then remove.
  3. Add remaining butter and sauté garlic until fragrant.
  4. Stir in honey and soy sauce to create a glaze.
  5. Add rice to the pan and stir to coat in the sauce.
  6. Pour in chicken broth and bring to a gentle simmer.
  7. Return chicken to the skillet, cover, and cook 18–22 minutes.
  8. Finish with lemon juice and garnish with parsley.

Notes

For extra caramelization, broil chicken for 2 minutes after cooking.
