  • 1 lb ground beef
  • 4 medium potatoes diced small
  • 1 onion chopped
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 1 cup cheddar cheese shredded
  • 0.5 cup mozzarella cheese optional
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 tsp thyme dried
  • salt and pepper to taste
  • 0.5 cup beef broth
  • 0.25 cup sour cream optional

Method
 

  1. Heat a skillet with olive oil over medium-high heat.
  2. Add potatoes and cook until golden and partially tender.
  3. Add onion and bell pepper; cook until softened.
  4. Add ground beef and cook until browned.
  5. Stir in garlic, paprika, onion powder, garlic powder, thyme, salt, and pepper.
  6. Pour in beef broth, cover, and simmer until potatoes are tender.
  7. Stir in sour cream if using.
  8. Top with cheese, cover, and let melt before serving.

Notes

For extra crispiness, broil the top for 2 minutes before serving.
