Ingredients
  

Main Dish
  • 1.5 lbs boneless chicken thighs cut into chunks
  • 1 cup long-grain rice uncooked
  • 1 cup BBQ sauce
  • 3 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp chili powder optional
  • salt and pepper to taste
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1.75 cups chicken broth

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken with paprika, garlic powder, onion powder, salt, pepper, and chili powder if using.
  3. Add chicken to the skillet and sear until lightly browned on all sides.
  4. Add minced garlic and cook for 1 minute.
  5. Stir in the uncooked rice to toast it slightly.
  6. Whisk together BBQ sauce, honey, soy sauce, and chicken broth.
  7. Pour mixture into the skillet and stir well.
  8. Bring to a simmer, reduce heat, cover, and cook for 18–22 minutes.
  9. Let rest 5 minutes, then fluff and garnish with parsley.

Notes

For extra glossiness, drizzle more honey-BBQ sauce on top before serving.
