- Preheat oven to 325°F (165°C). Pat pork loin dry.
- Season pork with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Sear pork loin in olive oil until browned on all sides.
- Mix Coca-Cola, ketchup, brown sugar, Worcestershire, soy sauce, and apple cider vinegar.
- Pour sauce over pork, cover, and roast for 60 minutes.
- Uncover, baste, and roast an additional 25–35 minutes.
- Rest pork for 10 minutes before slicing.
- Serve with extra glaze spooned over the top.
Notes
Use full-strength Coca-Cola for best caramelization.
