Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened
  • 1.5 cups powdered sugar
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice fresh
  • 1 tsp vanilla extract
  • 1 cup crushed graham crackers
Coating
  • 2 cups white chocolate chips
  • 1 tsp coconut oil optional

Method
 

  1. Beat cream cheese until smooth.
  2. Mix in powdered sugar, lemon zest, lemon juice, and vanilla.
  3. Fold in crushed graham crackers.
  4. Chill mixture until firm.
  5. Roll into balls and freeze briefly.
  6. Melt white chocolate and coat each truffle.
  7. Let set and garnish before serving.
