Method
- Preheat oven to 400°F (200°C) and line baking sheet with parchment.
- Roll puff pastry and cut into portions. Score borders lightly.
- Sauté shallots and mushrooms in butter and olive oil until golden.
- Mix goat cheese with cream and herbs until smooth.
- Spread cheese on pastry and top with mushroom mixture.
- Bake 18–22 minutes until golden and puffed.

Best served warm or at room temperature.
