Ingredients
  

Casserole
  • 1 lb ground beef lean
  • 1 cup white rice uncooked
  • 1 onion chopped
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 14 oz diced tomatoes
  • 1 cup tomato sauce
  • 2 cups beef broth
  • 2 tbsp taco seasoning
  • 1.5 cups shredded cheese Mexican blend

  • Aluminum foil

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Brown ground beef with onion and bell pepper in a skillet. Add garlic and seasonings.
  3. Stir in rice, tomatoes, tomato sauce, and broth.
  4. Transfer mixture to baking dish and cover with foil.
  5. Bake 35–40 minutes until rice is tender.
  6. Top with cheese and bake uncovered until melted.
