Salad Ingredients
  • 2 cups cherry tomatoes halved
  • 1 English cucumber diced
  • 1 red onion thinly sliced
  • 1 cup Kalamata olives halved
  • 1 cup feta cheese crumbled
  • 1 red bell pepper chopped
  • 0.5 cup fresh parsley chopped
  • 0.25 cup fresh mint chopped
  • 1 tbsp dried oregano
  • salt and pepper to taste
Dressing Ingredients
  • 0.25 cup extra virgin olive oil
  • 2 tbsp lemon juice fresh
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard optional
  • 1 clove garlic minced

Equipment

Method
 

  1. Prepare tomatoes, cucumber, bell pepper, and red onion and place them into a mixing bowl.
  2. Add the Kalamata olives and crumbled feta cheese into the bowl.
  3. Stir in chopped parsley, chopped mint, and dried oregano.
  4. Whisk olive oil, lemon juice, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper.
  5. Pour the dressing over the salad and toss gently until fully combined.
  6. Taste and adjust seasoning as needed, then serve immediately.

Notes

For best flavor, chill the salad for 15 minutes before serving.
