Ingredients
  

Main Ingredients
  • 1.5 lbs chicken breasts thinly sliced
  • 2 tbsp olive oil for marinade
  • 3 cloves garlic minced
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp oregano dried
  • 0.5 tsp smoked paprika
  • salt and pepper to taste
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red onion sliced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach
  • 0.33 cup Kalamata olives pitted
Garnish
  • fresh parsley chopped
  • feta cheese optional

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Combine chicken with olive oil, garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper. Marinate 10 minutes.
  2. Heat oil in a skillet over medium-high. Cook chicken 5–7 minutes until browned. Remove and set aside.
  3. Add peppers and onions to the skillet. Stir fry 5 minutes.
  4. Add tomatoes, spinach, and olives. Cook 2 minutes until spinach wilts.
  5. Return chicken to skillet and toss everything together. Adjust seasoning.
  6. Garnish with parsley and optional feta before serving.

Notes

For extra flavor, add a splash of lemon and olive oil at the end.
