Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken
  • 1 egg
  • 0.33 cup panko breadcrumbs
  • 0.25 cup grated Parmesan
  • 2 tbsp milk
  • 3 cloves garlic minced
  • 1 tbsp parsley chopped
  • 1 tsp onion powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Garlic Butter Sauce
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 0.5 cup chicken broth
  • 1 tbsp lemon juice
  • 0.5 tsp paprika
Cauliflower Rice
  • 4 cups cauliflower rice
  • 1 tbsp olive oil

Equipment

  • Mixing bowls

Method
 

  1. Combine chicken, egg, breadcrumbs, Parmesan, milk, garlic, parsley, onion powder, paprika, salt, and pepper.
  2. Roll mixture into 1–1.5 inch meatballs.
  3. Sear meatballs in a hot skillet until lightly browned.
  4. In the same skillet, melt butter and cook garlic until fragrant.
  5. Add chicken broth, lemon juice, and paprika. Return meatballs and simmer.
  6. Cook cauliflower rice in a separate pan with oil, salt, and pepper.
  7. Assemble meal prep bowls with cauliflower rice, meatballs, and garlic butter sauce.

Notes

For more flavor, add chili flakes or fresh basil.
