Ingredients
  

Carrots
  • 2 lbs carrots peeled and sliced
  • 4-5 strips thick-cut bacon diced
  • 3 tbsp unsalted butter melted
  • 0.25 cup maple syrup pure
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • salt and pepper to taste
Optional Garnish
  • chopped parsley optional

Method
 

  1. Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. Cook diced bacon in a skillet until crisp. Set aside and reserve 1 tablespoon of bacon fat.
  3. In a bowl, toss carrots with melted butter, maple syrup, bacon fat, smoked paprika, garlic powder, salt, and pepper.
  4. Spread carrots evenly on the baking sheet.
  5. Roast for 25–30 minutes, flipping halfway through.
  6. Add crispy bacon on top and roast 5 more minutes.
  7. Serve warm with optional parsley garnish.

Notes

For extra gloss, drizzle additional maple syrup in the last minutes of roasting.
