Method
- Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
- Cook diced bacon in a skillet until crisp. Set aside and reserve 1 tablespoon of bacon fat.
- In a bowl, toss carrots with melted butter, maple syrup, bacon fat, smoked paprika, garlic powder, salt, and pepper.
- Spread carrots evenly on the baking sheet.
- Roast for 25–30 minutes, flipping halfway through.
- Add crispy bacon on top and roast 5 more minutes.
- Serve warm with optional parsley garnish.
Notes
For extra gloss, drizzle additional maple syrup in the last minutes of roasting.
