Ingredients
  

Crepes
  • 1 cup all-purpose flour
  • 2 eggs large
  • 1.25 cups milk
  • 2 tbsp granulated sugar
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • 1 pinch salt
Mango Cream Filling
  • 1 cup ripe mango pureed or finely diced
  • 1 cup heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract

Equipment

  • Mixing bowls
  • Non-stick skillet
  • Whisk
  • Hand mixer or stand mixer

Method
 

  1. Whisk flour, sugar, and salt in a bowl.
  2. Add eggs and mix until thick.
  3. Gradually whisk in milk, then butter and vanilla.
  4. Rest batter 20 minutes.
  5. Cook thin crepes in a non-stick pan until lightly golden.
  6. Whip cream with sugar and vanilla.
  7. Fold mango into whipped cream.
  8. Fill and fold crepes into pillows and serve.

Notes

Best served fresh or lightly chilled.
