Ingredients
  

Potato Base
  • 2 lbs potatoes diced
  • 3 tbsp olive oil
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
Taco Topping
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1.5 cups shredded cheese cheddar or blend

Equipment

  • Baking sheet
  • Large skillet
  • Mixing bowls
  • Spatula

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss diced potatoes with oil and seasonings and spread on a baking sheet.
  3. Roast potatoes for 35–40 minutes, flipping halfway, until crispy.
  4. Cook ground beef in a skillet until browned.
  5. Add taco seasoning and simmer briefly.
  6. Assemble bowls with potatoes, meat, cheese, and toppings.
