Ingredients
  

  • 2 cups cooked chicken breast sliced or shredded
  • 1 large avocado ripe, sliced or mashed
  • 1 cup shredded cheese cheddar, mozzarella, or Monterey Jack
  • 4 slices bread sourdough or rustic bread
  • 1 tbsp olive oil or butter for toasting
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp mayonnaise or aioli optional

  • Skillet or griddle
  • Spatula

Method
 

  1. Preheat a skillet or griddle over medium heat.
  2. Season cooked chicken with garlic powder, smoked paprika, salt, and pepper.
  3. Brush one side of each bread slice with olive oil or butter.
  4. Spread sauce on the non-oiled side of bread.
  5. Layer chicken, cheese, and avocado onto the bread.
  6. Top with remaining bread slices, oiled side up.
  7. Cook sandwiches 3–4 minutes per side until golden and cheese is melted.
  8. Remove, slice, and serve warm.

Notes

Use ripe avocados and serve immediately for best texture.
