Ingredients
  

  • 8 slices bacon chopped
  • 8 eggs large
  • 0.25 cup milk
  • 6 flour tortillas cut into strips
  • 1 cup enchilada sauce
  • 2 cups shredded cheese cheddar or Mexican blend

Method
 

  1. Cook bacon in skillet until crispy and set aside.
  2. Sauté vegetables in bacon fat.
  3. Scramble eggs and remove from skillet.
  4. Add tortillas and enchilada sauce.
  5. Return eggs and bacon, top with cheese, and melt.
