  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 4 tbsp unsalted butter
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest finely grated
  • 0.5 tsp vanilla extract
  • 0.25 tsp salt

Method
 

  1. Line a 9x9-inch pan with parchment paper and lightly grease.
  2. Melt butter in a saucepan over low heat.
  3. Add marshmallows and stir until fully melted and smooth.
  4. Remove from heat and stir in lemon juice, zest, vanilla, and salt.
  5. Fold in Rice Krispies cereal until evenly coated.
  6. Press mixture gently into prepared pan.
  7. Let set at room temperature 30–45 minutes, then cut into squares.

Notes

Use fresh lemon juice for best flavor. Do not overheat marshmallows.
