Ingredients
  

Onion Rings
  • 2 large onions sliced into thick rings
  • 8 oz cream cheese softened
  • 2 jalapeños finely chopped
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Breading
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 0.5 cup milk
  • 1.5 cups breadcrumbs or panko

Equipment

  • Mixing bowls
  • Frying pan or deep fryer
  • Wire rack
  • Slotted spoon

Method
 

  1. Slice onions into thick rings and separate into pairs.
  2. Mix cream cheese, jalapeños, cheddar, and spices until smooth.
  3. Fill space between onion ring pairs with cream cheese mixture and chill.
  4. Coat rings in flour, egg mixture, then breadcrumbs.
  5. Fry in hot oil at 350°F until golden and crispy.
  6. Drain on wire rack and serve hot.

Notes

Chill before frying to prevent filling from leaking.
