Ingredients
  

Cookie Batter
  • 3 cups whole milk
  • 3 egg yolks
  • 0.5 cup granulated sugar
  • 3 tbsp cornstarch
  • 0.125 tsp salt
  • 2 tsp vanilla extract
  • 2 tbsp unsalted butter
Filling
  • 4-5 bananas sliced
  • 1 box vanilla wafers
  • 1.5 cups whipped cream optional

Method
 

  1. Whisk milk, egg yolks, sugar, cornstarch, and salt in a saucepan until smooth.
  2. Heat over medium, whisking constantly until thick and glossy.
  3. Remove from heat and stir in vanilla and butter.
  4. Slice bananas just before assembling.
  5. Layer wafers, bananas, and warm custard in a dish; repeat layers.
  6. Cover and refrigerate at least 4 hours or overnight.
  7. Top with whipped cream before serving, if desired.

Notes

For best flavor, chill overnight. Use ripe but firm bananas.
