Ingredients
  

Zucchini Skewers
  • 3 zucchini medium, sliced
  • 4 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp paprika optional
  • 1 tbsp fresh parsley chopped
  • 2 tbsp parmesan cheese optional

Method
 

  1. Slice zucchini into thick spears or rounds suitable for skewering.
  2. Soak wooden skewers in water for 20 minutes if using.
  3. Melt butter in a small saucepan over low heat and add minced garlic.
  4. Stir in olive oil, salt, pepper, and paprika, then remove from heat.
  5. Thread zucchini onto skewers and brush generously with garlic butter.
  6. Grill over medium heat for 8–10 minutes or roast at 400°F for 15–18 minutes, turning halfway.
  7. Brush with remaining garlic butter after cooking.
  8. Garnish with parsley and parmesan before serving.

Notes

Serve immediately for best texture and flavor.
