- Slice zucchini into thick spears or rounds suitable for skewering.
- Soak wooden skewers in water for 20 minutes if using.
- Melt butter in a small saucepan over low heat and add minced garlic.
- Stir in olive oil, salt, pepper, and paprika, then remove from heat.
- Thread zucchini onto skewers and brush generously with garlic butter.
- Grill over medium heat for 8–10 minutes or roast at 400°F for 15–18 minutes, turning halfway.
- Brush with remaining garlic butter after cooking.
- Garnish with parsley and parmesan before serving.
