Ingredients
  

Stew Base
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 stalks celery chopped
  • 4 potatoes peeled and diced
  • 2 tbsp tomato paste
  • 4 cups vegetable broth
  • 2 bay leaves
  • 1 tsp thyme dried or fresh
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley chopped, for garnish

Equipment

  • Large pot or Dutch oven
  • Cutting board

  • Wooden spoon

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and sauté until soft and translucent.
  3. Stir in garlic and cook briefly until fragrant.
  4. Add carrots and celery, cooking for several minutes.
  5. Mix in tomato paste and cook for 1 minute.
  6. Add potatoes, vegetable broth, bay leaves, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer covered for 35–40 minutes.
  8. Remove bay leaves, adjust seasoning, garnish with parsley, and serve.

Notes

This stew tastes even better the next day as flavors deepen.
