- Heat olive oil in a large pot over medium heat.
- Add onions and sauté until soft and translucent.
- Stir in garlic and cook briefly until fragrant.
- Add carrots and celery, cooking for several minutes.

- Add potatoes, vegetable broth, bay leaves, thyme, salt, and pepper.
