Ingredients
  

Vegetables
  • 1 lb parsnips peeled and chopped
  • 1 lb carrots peeled and chopped
  • 1 cup vegetable broth
  • 2 tbsp unsalted butter or olive oil
  • 1 tsp salt adjust to taste
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp dried thyme optional

Method
 

  1. Add vegetable broth to the Instant Pot insert.
  2. Add parsnips and carrots, spreading evenly.
  3. Season with salt, pepper, garlic powder, and herbs.
  4. Add butter or olive oil on top.
  5. Seal lid and cook on High Pressure for 5 minutes.
  6. Allow a 5-minute natural release, then quick release remaining pressure.
  7. Stir gently, adjust seasoning, and serve warm.

Notes

Cut vegetables evenly for best texture.
