- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Place flatbread on baking sheet and brush lightly with olive oil.
- Season ricotta with salt and pepper, then spread evenly over flatbread.
- Top with mozzarella cheese and cooked sausage crumbles.
- Sprinkle with red pepper flakes if using.
- Bake for 12–15 minutes until cheese is bubbly and edges are golden.
- Remove from oven, drizzle with hot honey, garnish with herbs, slice, and serve.
