Ingredients
  

Honey Lemon Vinaigrette
  • 1/4 cup fresh lemon juice about 1–2 lemons
  • 2 tbsp honey
  • 1/2 cup extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • Optional garlic pinch or finely minced
  • Optional fresh herbs parsley, basil, or thyme for garnish

Method
 

  1. Juice lemons to obtain 1/4 cup juice and strain seeds.
  2. Whisk lemon juice, honey, and Dijon mustard together until smooth.
  3. Slowly drizzle in olive oil while whisking continuously to emulsify.
  4. Add salt, pepper, and optional garlic or herbs. Whisk again.
  5. Taste and adjust sweetness or seasoning.
  6. Serve immediately or store in an airtight jar in the refrigerator up to 1 week.

Notes

For a creamy variation, blend in 1 tsp Greek yogurt. Shake before serving if stored.
