- Juice lemons to obtain 1/4 cup juice and strain seeds.
- Whisk lemon juice, honey, and Dijon mustard together until smooth.
- Slowly drizzle in olive oil while whisking continuously to emulsify.
- Add salt, pepper, and optional garlic or herbs. Whisk again.
- Taste and adjust sweetness or seasoning.
- Serve immediately or store in an airtight jar in the refrigerator up to 1 week.
Notes
For a creamy variation, blend in 1 tsp Greek yogurt. Shake before serving if stored.
