Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup creamy peanut butter
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
Filling
  • 0.25 cup unsalted butter softened
  • 0.5 cup creamy peanut butter
  • 1.25 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk or cream

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk flour, baking soda, and salt in a bowl.
  3. Cream butter, peanut butter, and sugars until light and fluffy.
  4. Add egg and vanilla extract, mixing well.
  5. Gradually add dry ingredients until dough forms.
  6. Roll dough into balls, flatten with fork, and bake 10–12 minutes.
  7. Cool cookies completely on wire racks.
  8. Beat filling ingredients until smooth and sandwich cookies together.

Notes

For best flavor, use high-quality creamy peanut butter and avoid overbaking.
