Ingredients
  

Dough
  • 1 cup mashed potatoes
  • 3.5 cups all-purpose flour
  • 2.25 tsp active dry yeast
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 0.75 cup warm milk
  • 0.25 cup warm water
  • 0.25 cup unsalted butter melted
  • 1 egg large
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped

Method
 

  1. Activate yeast in warm milk, water, and sugar.
  2. Mix mashed potatoes, butter, egg, and yeast mixture.
  3. Add flour, salt, and herbs to form dough.
  4. Knead until smooth and elastic.
  5. Let dough rise until doubled.
  6. Shape into rolls and rise again.
  7. Bake at 375°F (190°C) for 18–22 minutes.
  8. Brush with melted butter before serving.
