Ingredients
  

Filling
  • 6 large eggs
  • 0.5 cup milk or cream
  • 1 tbsp olive oil or butter
  • 8 oz Mexican chorizo or breakfast sausage
  • 0.5 medium onion finely diced
  • 1 bell pepper mixed red and green, diced
  • 0.5 cup shredded cheese cheddar or Monterey Jack
  • 0.25 tsp smoked paprika optional
  • salt and pepper to taste
Assembly
  • 6 tortillas flour or corn
  • 2 tbsp chopped fresh cilantro
  • lime wedges for serving

Method
 

  1. Cook chorizo in a skillet over medium heat until browned, then remove and set aside.
  2. Sauté onion and peppers in the same skillet until soft.
  3. Whisk eggs with milk, salt, pepper, and paprika, then pour into the skillet.
  4. Gently scramble eggs until nearly set, then add cheese and cooked chorizo.
  5. Warm tortillas and fill with the mixture.
  6. Top with cilantro and a squeeze of lime. Serve with salsa or avocado.

Notes

Add jalapeño for spice or black beans for extra protein.
