- Cook chorizo in a skillet over medium heat until browned, then remove and set aside.
- Sauté onion and peppers in the same skillet until soft.
- Whisk eggs with milk, salt, pepper, and paprika, then pour into the skillet.
- Gently scramble eggs until nearly set, then add cheese and cooked chorizo.
- Warm tortillas and fill with the mixture.
- Top with cilantro and a squeeze of lime. Serve with salsa or avocado.

Add jalapeño for spice or black beans for extra protein.
