Ingredients
  

Sweet Potato Base
  • 2 medium sweet potatoes peeled and cubed
  • 1 tbsp olive oil
  • 0.5 tsp ground cinnamon
  • 1 pinch salt
Yogurt Bowl
  • 1.5 cups plain Greek yogurt
  • 0.5 tsp vanilla extract
  • 1-2 tbsp honey or maple syrup to taste
Toppings
  • 0.25 cup fresh berries
  • 2 tbsp chopped nuts
  • 1 tbsp seeds chia, flax, or pumpkin

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, cinnamon, and salt. Spread evenly on baking sheet.
  3. Roast for 25–30 minutes until tender and lightly caramelized. Cool slightly.
  4. Mash roasted sweet potatoes until smooth or slightly chunky.
  5. In a bowl, mix yogurt with vanilla and sweetener.
  6. Stir mashed sweet potatoes into yogurt until creamy.
  7. Divide into bowls and add toppings.
  8. Serve immediately or chill before serving.

Notes

This bowl can be prepared ahead and stored in the refrigerator for up to 3 days.
