  • 3 cups shredded chicken cooked
  • 1.5 cups salsa verde
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or canned, drained
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp chili powder
  • salt and pepper to taste
  • 1 cup shredded Mexican blend cheese
  • 0.25 cup fresh cilantro chopped
  • 6 small tortillas whole wheat or corn, cut into strips

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish.
  2. In a large bowl, combine shredded chicken, salsa verde, black beans, corn, onion, garlic, cumin, paprika, chili powder, salt, and pepper.
  3. Spread a thin layer of chicken mixture in the casserole dish, add a layer of tortilla strips, then half of the remaining chicken mixture and half of the cheese.
  4. Repeat layering with remaining chicken mixture, tortillas, and cheese.
  5. Cover with foil and bake for 20 minutes, then remove foil and bake 10 more minutes until cheese is bubbly and golden.
  6. Remove from oven, let rest 5 minutes, garnish with cilantro, and serve with lime wedges.

Notes

Can be made ahead or frozen before baking. Adjust spice level to preference.
