Method
- Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish.
- In a large bowl, combine shredded chicken, salsa verde, black beans, corn, onion, garlic, cumin, paprika, chili powder, salt, and pepper.
- Spread a thin layer of chicken mixture in the casserole dish, add a layer of tortilla strips, then half of the remaining chicken mixture and half of the cheese.
- Repeat layering with remaining chicken mixture, tortillas, and cheese.
- Cover with foil and bake for 20 minutes, then remove foil and bake 10 more minutes until cheese is bubbly and golden.
- Remove from oven, let rest 5 minutes, garnish with cilantro, and serve with lime wedges.
Notes
Can be made ahead or frozen before baking. Adjust spice level to preference.
