Ingredients
  

Cookie Batter
  • 2 large ripe bananas mashed
  • 1 cup rolled oats
  • 0.5 cup natural peanut or almond butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.25 tsp salt
Filling
  • Optional add-ins nuts, sugar-free chocolate, coconut

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mash bananas in a medium bowl until smooth.
  3. Add nut butter, vanilla, cinnamon, and salt. Mix well.
  4. Stir in oats until a thick batter forms.
  5. Fold in any optional add-ins.
  6. Scoop dough onto baking sheets using a tablespoon and flatten.
  7. Bake 12–14 minutes until set and lightly golden. Cool on racks.
  8. Serve immediately or store in an airtight container.

Notes

Use extra ripe bananas for maximum sweetness.
