Ingredients
  

  • 1.5 cups cooked green lentils rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 0.33 cup red onion finely chopped
  • 0.25 cup fresh parsley chopped
  • 0.5 cup feta cheese crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 1 clove garlic minced
  • 0.5 tsp dried oregano
  • salt and black pepper to taste

Method
 

  1. Cook lentils until tender, drain, and cool completely.
  2. Chop all vegetables and herbs.
  3. Whisk olive oil, lemon juice, zest, garlic, oregano, salt, and pepper.
  4. Combine lentils, vegetables, and herbs in a large bowl.
  5. Pour dressing over salad and toss gently.
  6. Fold in feta cheese carefully.
  7. Rest 10–15 minutes before serving.
