- Cook tortellini according to package directions. Drain and cool completely.
- In a large bowl, whisk mayonnaise, olive oil, red wine vinegar, oregano, salt, and pepper.
- Add cooled tortellini and toss to coat.
- Fold in meats, cheese, tomatoes, onion, and pepperoncini.
- Gently fold in romaine lettuce just before serving.
- Chill 30 minutes before serving for best flavor.
