Ingredients
  

Chicken Bowl
  • 1.5 lbs chicken breasts boneless, skinless
  • 4 cups broccoli florets
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 3 cups cooked rice or quinoa
Creamy Garlic Sauce
  • 0.75 cup Greek yogurt
  • 0.25 cup mayonnaise
  • 2 tbsp lemon juice
  • 2 garlic cloves grated
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley finely chopped

Equipment

Method
 

  1. Season chicken with olive oil, salt, pepper, and paprika.
  2. Grill chicken over medium-high heat 5–7 minutes per side until cooked through.
  3. Steam or roast broccoli until crisp-tender.
  4. Warm cooked rice or quinoa.
  5. Whisk together yogurt, mayo, garlic, lemon juice, olive oil, salt, pepper, and parsley to make the creamy garlic sauce.
  6. Slice grilled chicken.
  7. Assemble bowls with rice, chicken, broccoli, and sauce.

Notes

For extra flavor, add a squeeze of lemon or chili flakes before serving.
