Ingredients
  

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 2 cups shredded chicken cooked
  • 2 cups green enchilada sauce
  • 4 cups chicken broth
  • 1 cup corn
  • 4 oz cream cheese softened
  • 0.5 cup sour cream
  • 1 cup shredded cheese

Equipment

  • Large pot or Dutch oven

Method
 

  1. Heat oil in a pot and sauté onion until soft.
  2. Add garlic and spices; cook briefly.
  3. Add chicken, enchilada sauce, broth, corn, and chilies.
  4. Simmer for 10 minutes.
  5. Stir in cream cheese until smooth.
  6. Add sour cream and cheese; stir until creamy.
  7. Serve hot with desired toppings.

Notes

Adjust spice level with jalapeños or mild enchilada sauce.
