- Whisk olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, pepper, and red wine vinegar together to create the marinade.
- Place beef cubes in a bowl, pour marinade over them, and refrigerate for 2 hours or up to overnight.
- Heat grill or grill pan to medium-high.
- Thread marinated beef onto skewers.
- Grill skewers 8–10 minutes, turning occasionally, until charred and cooked to desired doneness.
- Rest 5 minutes before serving with pita, tzatziki, and lemon wedges.
Notes
For extra tenderness, marinate the beef overnight.
