Ingredients
  

Beef Souvlaki
  • 2 lbs beef sirloin or ribeye, cubed
  • 0.25 cup olive oil
  • 1 lemon, juiced
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp thyme
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp red wine vinegar
  • 1 tbsp fresh parsley chopped

Method
 

  1. Whisk olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, pepper, and red wine vinegar together to create the marinade.
  2. Place beef cubes in a bowl, pour marinade over them, and refrigerate for 2 hours or up to overnight.
  3. Heat grill or grill pan to medium-high.
  4. Thread marinated beef onto skewers.
  5. Grill skewers 8–10 minutes, turning occasionally, until charred and cooked to desired doneness.
  6. Rest 5 minutes before serving with pita, tzatziki, and lemon wedges.

Notes

For extra tenderness, marinate the beef overnight.
