Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 0.5 cup chicken broth
  • 0.25 cup heavy cream

Equipment

  • Large skillet
  • Pot
  • Potato masher
  • Mixing spoon

Method
 

  1. Boil potatoes until tender and mash with butter and milk.
  2. Season and sear chicken until golden and cooked through.
  3. Cook garlic in butter, deglaze with broth, add cream and simmer.
  4. Return chicken to skillet and glaze with sauce.
  5. Serve over mashed potatoes with extra sauce.

Notes

Do not overcrowd pan for proper browning. Warm milk before mashing potatoes.
