Ingredients
  

Soup Base
  • 2 tbsp olive or sesame oil
  • 1 lb chicken thighs or breasts thinly sliced
  • 4 cloves garlic minced
  • 2 tbsp fresh ginger grated
  • 1 onion diced
  • 2 carrots thinly sliced
  • 2 stalks celery chopped
  • 6 cups chicken broth
  • 1-2 tbsp soy sauce
  • 6 oz noodles any type
  • 1 cup mushrooms optional, sliced
  • 1 tsp sesame oil optional
  • salt and pepper to taste
  • green onions or cilantro for garnish

Method
 

  1. Heat oil in a large pot over medium heat. Add garlic and ginger, sauté until fragrant.
  2. Add chicken and cook until lightly browned.
  3. Stir in onions, carrots, celery, and mushrooms; cook until slightly softened.
  4. Pour in chicken broth and soy sauce; bring to a simmer.
  5. Add noodles and cook until tender.
  6. Season with salt, pepper, and sesame oil. Adjust to taste.
  7. Serve hot and garnish with green onions or cilantro.

Notes

For extra flavor, add a splash of rice vinegar or chili oil.
