Ingredients
  

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 8 oz mushrooms sliced
  • 5 cups baby spinach
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Season salmon with salt and pepper.
  2. Sear salmon in olive oil until golden, then remove.
  3. Melt butter and sauté garlic.
  4. Cook mushrooms until tender, then add spinach.
  5. Return salmon, spoon sauce over, and finish with lemon.
