Ingredients
  

Garlic Aioli
  • 2 large egg yolks room temperature
  • 3-4 garlic cloves finely minced or grated
  • 1 cup extra virgin olive oil or half neutral oil
  • 1 tbsp lemon juice fresh
  • 1/4 tsp salt
  • 1/4 tsp black pepper freshly ground
  • Optional spice smoked paprika or cayenne

Method
 

  1. Ensure egg yolks are room temperature. Mince or grate garlic.
  2. Whisk egg yolks until slightly thickened.
  3. Stir in minced garlic until combined.
  4. Slowly drizzle olive oil while whisking constantly to emulsify.
  5. Add lemon juice, salt, and black pepper. Whisk again and adjust seasoning.
  6. Serve immediately or store in airtight container in refrigerator for up to 3 days.

Notes

For a roasted garlic flavor, roast cloves before adding. Keep refrigerated; fresh aioli lasts about 3 days.
