Ingredients
  

Salad Ingredients
  • 4 cups shredded cabbage
  • 1 cup corn kernels
  • 1 cup black beans rinsed & drained
  • 1 cup cherry tomatoes halved
  • 3 green onions sliced
  • 1 cup shredded cheddar cheese
  • 1 handful fresh cilantro chopped
  • 1 lime juiced
  • 2 cups Fritos crushed, added before serving
Dressing
  • 1 cup ranch dressing
  • 2 tbsp mayo or Greek yogurt
  • 1 tbsp lime juice
  • 0.5 tsp taco seasoning

Equipment

Method
 

  1. Add shredded cabbage, tomatoes, green onions, corn, and black beans to a large bowl.
  2. Whisk ranch, mayo/Greek yogurt, taco seasoning, and lime juice until smooth.
  3. Pour dressing over salad ingredients and toss until fully coated.
  4. Fold in cheddar cheese and cilantro.
  5. Chill salad if not serving immediately.
  6. Add crushed Fritos right before serving and toss lightly.

Notes

Keep Fritos separate until serving for maximum crunch.
