Ingredients
  

Cookie Batter
  • 4 Roma tomatoes diced and seeded
  • 1 small white onion finely diced
  • 1 jalapeño pepper minced, seeds removed
  • 0.5 cup fresh cilantro chopped
  • 2 tbsp lime juice freshly squeezed
  • 0.5 tsp salt or to taste
Filling
  • 1 clove garlic optional, minced
  • 0.25 tsp black pepper optional
  • 0.5 tsp sugar optional, balances acidity

Method
 

  1. Dice tomatoes and remove seeds for best texture.
  2. Finely chop the onion and rinse if preferred to reduce sharpness.
  3. Mince the jalapeño pepper, removing seeds for mild heat.
  4. Chop fresh cilantro and prepare remaining ingredients.
  5. Combine tomatoes, onion, jalapeño, and cilantro in a mixing bowl.
  6. Add lime juice, salt, and optional ingredients. Mix gently.
  7. Let mixture rest for 10–15 minutes to develop flavor.
  8. Taste and adjust lime, salt, or jalapeño before serving.

Notes

For best results, use firm tomatoes and fresh lime juice. Adjust heat level by adding more jalapeño or substituting serrano peppers.
