Ingredients
  

Coleslaw Base
  • 3 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 2 apples thinly sliced
  • 1 cup shredded carrots
  • 0.25 cup sliced green onions
Dressing
  • 0.5 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice

Equipment

Method
 

  1. Combine cabbage, carrots, and green onions in a large bowl.
  2. Slice apples thinly and toss with lemon juice to prevent browning.
  3. Add apples to the cabbage mixture.
  4. Whisk mayonnaise, vinegar, mustard, honey, salt, and pepper together.
  5. Pour dressing over vegetables and toss well.
  6. Chill for 20–30 minutes before serving.

Notes

For extra crunch, add walnuts or sunflower seeds.
