- Season chicken with salt and pepper.
- Heat olive oil and sear chicken until golden; remove and set aside.
- Add butter, shallots, and garlic to skillet and sauté until fragrant.
- Stir in Dijon mustard and optional whole grain mustard.
- Add chicken broth and scrape the pan to deglaze.
- Stir in cream, tarragon, and thyme.
- Return chicken to skillet and simmer until cooked through and sauce thickens.
- Add lemon juice, adjust seasoning, and serve warm.
