Ingredients
  

Burrito Filling
  • 8 large eggs
  • 0.25 cup milk
  • 2 cups diced potatoes cooked
  • 1 cup shredded cheese
  • 1 cup bell peppers diced
  • 0.5 cup onion chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
Wrap
  • 8 large flour tortillas

Equipment

  • Mixing bowls
  • Large skillet
  • Spatula
  • Foil or parchment paper

Method
 

  1. Cook potatoes in a skillet until tender and golden. Set aside.
  2. Sauté onions and bell peppers until soft. Remove from heat.
  3. Whisk eggs with milk, salt, and pepper. Scramble gently until just set.
  4. Let all fillings cool completely before assembling.
  5. Fill tortillas with eggs, potatoes, veggies, and cheese.
  6. Roll tightly and wrap each burrito in foil or parchment.
  7. Freeze burritos in a freezer-safe bag for up to 3 months.

Notes

Allow fillings to cool fully before wrapping to prevent soggy burritos.
