Method
- Blend cottage cheese and egg until smooth.
- Whisk flour, baking powder, and salt in a bowl.
- Add wet ingredients and olive oil to dry ingredients and mix into a soft dough.
- Rest dough for 10 minutes.
- Divide dough into 6 portions and roll thin.
- Cook in a nonstick skillet over medium heat for 2–3 minutes per side.
Notes
Blend cottage cheese well for best texture. Serve warm.
