Ingredients
  

Flatbread Dough
  • 1 cup cottage cheese
  • 1 egg large
  • 1.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tbsp olive oil
  • 2-3 tbsp milk as needed

Equipment

  • Mixing bowls
  • Nonstick skillet
  • Blender or food processor

Method
 

  1. Blend cottage cheese and egg until smooth.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Add wet ingredients and olive oil to dry ingredients and mix into a soft dough.
  4. Rest dough for 10 minutes.
  5. Divide dough into 6 portions and roll thin.
  6. Cook in a nonstick skillet over medium heat for 2–3 minutes per side.

Notes

Blend cottage cheese well for best texture. Serve warm.
